Say hello to this amazing frosting.  You won’t believe how easy it is. With just a few ingredients and an electric mixer, you can whip this up in no time. The best part is, most of the ingredients are probably in your cabinets already (maybe not the cream, but you can’t make magic without some effort!).

I have been using the leftovers to discover its many uses this afternoon.  It’s great spread on Oreos (even though I don’t even like Oreos, I like them now), it’s wonderful eaten with a spoon, and it also makes a divine topping for brownies.

Piled atop a soft chocolate cupcake is probably the most sublime way to enjoy it.

Dreamy Peanut Buttercream Frosting

1/2 cup all-natural creamy peanut butter (I use All-Natural Jif or Skippy)
1/2 cup confectioner’s sugar
pinch kosher salt
1/2 teaspoon vanilla
1/3 cup heavy cream

In a medium size bowl, use an electric mixer to combine peanut butter, sugar, salt, and vanilla. Add in a little cream and beat until smooth. Add a little more cream, and beat until smooth. Repeat until all cream is incorporated. If you have a whisk attachment, switch to the whisk attachment and whisk until light and fluffy, about 1 minute. Spread on whatever you want, and refrigerate whatever is left.

Try as I might to steer clear of cupcakeries, I find myself near-obsessively slinking into any corner bakery that pops up in my city, tasting and trying their cupcakes, hoping for baked good perfection. Time and time again, I find myself realizing that I already know of the best cupcakes, because I make them at home. The cupcake actually matters less than does the frosting. The Best Whippy White Frosting Ever

5 tbsp flour
1 cup milk
seeds of 1 vanilla bean
1 tablespoon coconut rum
1 cup butter
1 cup sugar

Whisk flour, milk, vanilla bean, and coconut rum together in a small saucepan over medium heat. Stir constantly until the mixture thickens. Remove from heat and allow to cool completely to room temperature (I just toss it in the freezer or fridge while I prepare the next step).

While the mixture is cooling, cream the butter and sugar together until all of the grainy sugary texture is completely gone. Whip in the cooled mixture. Use a stand mixture to beat together until extremely light and fluffy (like whipped cream). Frost on your favorite cooled cupcakes. Serve and enjoy!


Today was W’s preschool’s spring celebration – a May Pole dance in the yard behind the sandstone building – the kids wearing homemade tissue paper flower crowns danced around a ribboned pole as it began to rain. When they finished the parents grabbed all the snacks that had been set out on a picnic table under the tree before the rain/performance began, and we ushered the kids inside for our little party. Which really involved all of us crammed around some preschool-sized tables and chairs, munching on fruit skewers and goldfish crackers. A wonderful lunch.

When I asked W yesterday what he would like to make to bring to his party, he chose cupcakes. Chocolate with chocolate icing, and chocolate sprinkles if at all possible. We baked them – miniature ones – last night and frosted them this morning over breakfast. A quick buttercream icing tossed together, measured by eyeball. A blob of butter, shake of dark cocoa and bigger shake of icing sugar, and a bit of water to get it all going. (I usually make frosting like this, adding more sugar or water as needed until I have something spreadable.)

To frost, this is my favourite trick: scoop frosting into a zip-lock baggie, seal and snip off a corner; squeeze out a simple thick rope that can easily create smooth swirls atop the cakes, then toss the used bag out. Easy.



Zip-lock bags are great for all kinds of icing tricks; snip off a teeny bit of the tip and you can write with it, or shove a decorating tip into the corner and tape around it for a fancy piping bag. If you just want to drizzle something with chocolate, put chocolate chips in a zip-lock bag, seal and place in a bowl of warm water; once melted, snip the tip off, drizzle away, and toss the bag. As for the sprinkles, only a few cakes got some.

This is my favourite chocolate cake recipe – made with canola oil instead of butter and cocoa instead of baking chocolate, it’s dense and moist and intensely chocolate, yet low in saturated fat.

Chocolate Cupcakes

1 3/4 cups all-purpose flour (or half all-purpose, half whole wheat)
1 cup packed brown sugar
3/4 cup cocoa
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 cup milk (or soy milk)
1/2 cup canola oil
2 large eggs
2 tsp. vanilla extract
1 cup coffee (I use instant decaf – it intensifies and deepens the chocolate flavor without adding fat or calories)

Preheat oven to 350° F. Line 24 cupcake tins with paper liners (or, more realistically, 12 at a time).

In a large bowl, stir together the flour, brown sugar, cocoa, baking powder, baking soda and salt, breaking up any lumps of brown sugar and cocoa. (I like using a whisk for this.)

Add the milk, oil, eggs and vanilla and whisk until well blended. Add the coffee and whisk again (or beat on low speed) just until blended. The batter will be thin.

Divide the batter among the tins, filling them about 3/4 full, and bake for 25 minutes, until the tops are springy to the touch. Tip them a bit in their pans to let the steam escape and help them cool. Cool completely before frosting them. Makes about 2 dozen cupcakes.



Chocolate Frosting

Flavor your frosting with a few drops of peppermint or vanilla extract, or use strong coffee or orange juice.

1/4 cup butter, softened
1/2 cup cocoa
2 cups (ish) icing (confectioners’) sugar
water, orange juice or milk – enough to make it spreadable

In a medium bowl, beat the butter, cocoa, half the sugar and a couple spoonfuls of water; beat until smooth. Beat in the rest of the sugar and enough extra liquid to make a spreadable frosting.

Preheat the oven to 180 C / Gas 4. Line a muffin tin with paper cases.
Cream together margarine and sugar till light and fluffy. Add eggs one at a time, beating continuously. Sift in flour and mix gently.
Spoon mixture into prepared muffin tin. Bake for 20 minutes (dependant on cake size) until golden brown and skewer comes out clean. Cool on a wire rack.
To decorate: Melt chocolate either in a bowl suspended over a pan of simmering water, or in the microwave at 30 second intervals.
Drizzle melted chocolate on top of cupcakes and decorate with sweets. Leave to set. Enjoy!

INGREDIENTS

Vegetable-oil cooking spray
2/3 cup all-purpose flour
1/3 cup unsweetened Dutch-process cocoa powder
2/3 cup sugar
1/2 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
1 large egg, room temperature
1/4 cup whole milk
3 tablespoons vegetable oil
1/2 teaspoon pure vanilla extract
Individual Chocolate Mousse
2 ounces solid semisweet chocolate
DIRECTIONS

Preheat oven to 350 degrees. Place eight 6-ounce (3 1/2-inch diameter) ramekins on a rimmed baking sheet, and coat with cooking spray; set aside.

Stir flour, cocoa powder, sugar, baking soda, baking powder, and salt in the bowl of an electric mixer. Attach bowl to mixer fitted with the paddle attachment. Add egg, milk, oil, vanilla, and 1/4 cup water; mix on medium-low speed until smooth and combined, about 3 minutes.
Divide batter evenly among prepared ramekins. Bake until a cake tester inserted into the centers comes out clean, about 20 minutes. Transfer to a wire rack; let cool completely. Run a knife around sides of cakes; unmold. Cakes can be refrigerated, wrapped in plastic, up to 1 day.
Trim each cake to 1 inch high. Transfer to a baking sheet lined with parchment paper. Cut eight 10 3/4-by-4-inch strips of parchment paper. Wrap a parchment collar around base of each cake, keeping bottom flush with baking sheet. Secure each collar with tape; set aside.
Transfer bittersweet-chocolate mousse to a large pastry bag fitted with a large round tip (such as Ateco #808). Pipe a 1-inch layer of mousse into each parchment collar. Refrigerate until mousse is set, about 20 minutes. Repeat with milk chocolate mousse, piping on top of the bittersweet chocolate mousse. Refrigerate at least 4 hours and up to overnight.
 WATCH: How to Pipe Using a Round Tip
Microwave semisweet chocolate until slightly warm but not melted, about 30 seconds. Scrape at a 45-degree angle with a vegetable peeler, forming curls. Before serving cakes, remove parchment collars, and garnish with chocolate curls.

I thought I would put this review here tos as well as on the mousse recipe. These cakes are a huge hit every time I make them. Delicious and discouraging to make:
-the 2 mousses are yummy. It is a ton of work to have to wash & dry all that equipment in the midst this project.
-I overcooked my sugar syrup the first time & it crystallized, causing me to waste most of my b-sweet chocolate in the sieve. Be careful with your cook time.
-the cakes were only okay. They provide a good, sturdy base for the mousse but get hard & lose flavor with all the refrigeration.
-Consider doubled parchment & wrap-around packing tape.

Okay, my first and biggest complaint is that tape doesn't stick to parchment paper. I ended up having to smear corn syrup on the outside to keep the parchment paper together while the mousses were in the fridge.Also, as someone else said, the milk chocolate really didn't set nicely. I had to serve mine with the parchment paper still wrapped around to keep it from falling apart.Otherwise, these were delicious. I don't think I'll be making them again, though. REPLY

Ingredients:
For the cakes:
1 1/4 cups all purpose flour
1/2 cup dark cocoa powder
1/4 tsp salt
 1/2 tbs baking powder
3/4 tsp baking soda
1 tsp pumpkin pie spice
1/3 cup buttermilk
3/4 cup pumpkin puree
1 tsp vanilla extract
1/2 cup + 2 tbs unsalted butter, room temperature
1 cup brown sugar
1/2 cup granulated sugar
3 eggs
For the cranberry curd:
1/4 cup water
1/4 cup orange juice
1 12 oz bag of fresh cranberries
3/4 cup brown sugar
1/4 cup granulated sugar
4 egg yolks
1 3/4 tbs corn starch
pinch of salt
1 cinnamon stick
For the frosting:
1 cup unsalted butter, room temperature
1/3 cup molasses
4 cups powdered sugar
1/4 tsp salt
1/2 tsp cinnamon
1/4 cup heavy cream
To prepare your cupcakes:
Preheat oven to 350.
Line cupcake pans with 18-24 liners
In the bowl of your electric mixer on medium speed, cream butter , both types of sugar together until it is lightly and fluffy.
Mix in each egg one at a time.
Mix in pumpkin puree, vanilla and buttermilk.
In a separate bowl, whisk flour, cocoa powder, baking powder, baking soda, salt and pumpkin pie spice together.
With your mixer on medium/low, slowly pour in your flour mixture.
Once Incorporated, remove from mixer and pour into cupcake liners. Do not fill more than 3/4 of the way.
Bake for about 22-25 minutes or until a tooth pick is inserted and comes out clean.
To prepare your filling:
In a sauce pan over medium heat, add orange juice, water, cranberries and cinnamon stick. Bring to a boil and allow to simmer until all of the berries have popped and it has begun to thicken.
Remove from heat, discard cinnamon stick.
Pour/push mixture through a fine sieve into a separate sauce pan. Discard skin/pulp.
Add egg yolks, both types of sugar and salt into the pan with the cranberry mixture. Whisk constantly over low heat.
Slowly pour in corn starch. Continue whisking.
Whisk the mixture until it is lump free and it has thickened to the constancy of pudding.
Add in butter and stir until melted.
Pour into a heat proof container and refrigerate until cold.
To prepare your frosting:
In the bowl of your electric mixer using your whisk attachment, cream butter and salt until fluffy.
Mix in molasses.
Slowly add powdered sugar 1/2 cup at a time.
Once combined, while mixer is on medium speed. Mix in heavy cream 1 tbs at a time until the mixture is lightly and fluffy. If it appears to be too thick go ahead and add a few drops of cream to thin it to your likings.
To assemble:
Cut a small circle in the top of each cooled cupcake. About a 1/2 inch around.
Fill a piping back with cranberry curd, and pipe 1-2tsp of filling into each center.
Add frosting to a clean piping bag, and dollop frosting over the tops of each cake covering the curd.
