Directions
1Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottom and sides of 13x9-inch pan or two 9-inch round cake pans and lightly flour, or spray with baking spray with flour.
2In large bowl, beat cake ingredients with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan(s).
3Bake as directed on box. Cool rounds 10 minutes; remove from pans. Cool completely.
4In chilled large bowl, mix cream cheese and milk until smooth. Beat in whipping cream and powered sugar with electric mixer on high speed, scraping bowl occasionally, until soft peaks form. Frost top of 13x9-inch cake or fill and frost cake layers. Store loosely covered in refrigerator.

This cake was fabulous, cannot believe sarahjwitt has such trouble. I used the buttermilk and also used an 8 oz Daisy sour cream. Even though I greased and floured my bundt pan, I still had a little trouble getting it to come out but I just put it in the fridge to cool down more even though it was cool to the touch. It came out, I used a can cream frosting to cover some of the blemishes but it was amazing, so moist, amazing and very easy.
Delicious! I used buttermilk and followed the directions on the box to adjust the oven temperature for baking in my non-stick pans. The cake was moist and it was indeed easy.
I made this cake for our first wedding anniversary and it was very dry. The flavor was great but you could have used it to sand down an end table. I have never had a cake come out like this. Don't know what happened. Maybe I screwed up one of the ingredients, but I doubt it.
I made the cake, and it turned out great. But with the frosting I accidentally put a little too much cream cheese in it. It was still good and wasn't too runny or dry, I just added some more powdered sugar. I read on here that their frosting was too runny so i only put 1 1/3 of the whipping cream in it hoping
I may not be an absolute connoisseur of red velvet cake like Taunique, but this seemed to be a very acceptable substitute. The grocery stores were out of Red Velvet mix for Valentine's. I remembered this recipe and made the "classic" version with buttermilk. Used my own cream cheese frosting made with 1/4 c. butter, 2 c. powdered sugar, 4 oz. cream cheese, a little vanilla, and a drizzle of cream to make a smooth frosting. Added coarsely chopped pecans on top and thought the cake very moist and flavorful. Baked it the full 35 minutes in a 13 X 9 pan. I've made the real red velvet from scratch and this is a major time-saver.
The cake itself is absolutely delicious! However, the icing was outrageously runny. I followed the directions to perfection and I ended up having to triple the amount of powdered sugar and cream cheese just to get it to thicken up! I recommend trying a different icing recipe for this, or else it will be a disaster!
Hello All....I have looked and looked for a red velvet recipe. I chose to try this recipe because of the easiness. Then with all of the great reviews I thought I would give it a try. The cake turned out great although you have to watch it while it's baking or you may end up with a very dry cake!!! I took mine out at 20 minutes in a gas oven stove. It has a nice texture and taste.
There is only one problem I have with this recipe. Being I"m a born and raised Mississippi girl I must admit. This cake DOES NOT TASTE LIKE A RED VELVET!!!! The color doesn't even resemble a true red velvet cake. The picture that is used with this recipe above is very close to the original color of my cake I baked. The icing will remind you of a red velvet cake but the actual cake part will remind you of a German Chocolate cake. lol With all this being said, I have to give this imposter a 2 rating. So, if you're a serious red velvet cake lover then leave this imposter alone. Bakers Beware!!

Ingredients
 3 cups all-purpose flour
 2 cups white sugar
 1/3 cup unsweetened cocoa powder
 2 teaspoons baking soda
 1 teaspoon salt
 2 eggs
 1 cup milk
 1 cup water
 1 cup vegetable oil1/4 cup butter
 1/4 cup shortening
 2 cups confectioners' sugar
 1 pinch salt
 3 tablespoons milk
 1 teaspoon vanilla extract
Directions
Preheat oven to 375 degrees F (190 degrees C). Line 36 muffin cups with paper liners.
In a large bowl, mix together the flour, sugar, cocoa, baking soda and 1 teaspoon salt. Make a well in the center and pour in the eggs, 1 cup milk, water, oil and 1 teaspoon vanilla. Mix well. Fill each muffin cup half-full of batter.
Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
Make filling: In a large bowl, beat butter and shortening together until smooth. Blend in confectioners' sugar and pinch of salt. Gradually beat in 3 tablespoons milk and 1 teaspoon vanilla. beat until light and fluffy. Fill a pastry bag with a small tip. Push tip through bottom of paper liner to fill each cupcake.


Here is the EASIEST tip for filling the cupcakes. Take an APPLE CORER and use that to pull a cylindrical plug of cake out of each cupcake (once they've cooled). Save the plugs on the side while you pipe filling into each hole you've created. "Plug" up each hole using the plugs/caps you had removed with the apple corer. Simple and fast!
I thought this was a great idea, but not the greatest recipe. The chocolate cupcakes weren't the tastiest -- I'd use a different recipe for that part next time. The cream filling was great, so I wound up using a double batch of filling for one batch of cupcakes. I didn't like the idea of pushing it in from the bottom (sounded way too messy for me). So I used a knife and cut a cone shape out of the top, spooned the filling in, and replaced the top. (Just be sure to wait until the cupcakes have cooled, or the cream filling just melts!) Then I frosted them using the great chocolate frosting recipe mentioned in another review, and you can't tell they're anything but chocolate cupcakes until you bite into them. My boyfriend says these are now his FAVORITE dessert!
This is a super recipe! I usually always mess up new recipes, but this turned out perfect, it was easy, and everyone at work loved it. I used an incredible chocolate frosting receipe I found on this same site: 1/4 cup margarine, melted; 1/2 cup unsweetened cocoa powder; 1/3 cup milk; 1 teaspoon vanilla extract; 3 1/2 cups confectioners' sugar. In a large bowl, beat margarine and cocoa together until combined. Add milk and vanilla; beat until smooth. Gradually beat in confectioners' sugar until desired consistency is achieved. Adjust with more milk or confectioners' sugar if necessary.
Five stars for a great filling! I needed a cocoa filling to fill cupcakes for my son's birthday so I just changed 2 ingredients in this cream filling recipe and it turned out great! I used all butter (didn't have shortening) and I replaced 1/4 cup of the confectioner's sugar with unsweetened cocoa powder. I also filled my cupcakes from the top since I was going to frost them. By the way, I used a triple chocolate fudge cake mix for the cupcake and a vanilla buttercream for the frosting (my son's favorite). The cream filling recipe with the changes I made generously filled 24 cupcakes. Everyone loved the finished cupcakes - kids and adults

INGREDIENTS
226g butter
240g brewed espresso
80g cocoa powder
1 tsp salt
260g all-purpose flour
350g sugar
10g baking soda
2 eggs
113g sour cream
1 tsp vanilla paste
300g dark chocolate, chopped

INSTRUCTIONS
Grease mini bundt pans well with PAM spray and set aside. In a small pot, bring butter and espresso to a boil. Pour over cocoa powder and whisk until smooth. Set aside to cool. Sift together salt, flour, sugar and baking soda. Pour over cocoa mixture and whisk until smooth. Add eggs, one at a time, making sure to full incorporate before adding the next. Add sour cream and vanilla paste and whisk until smooth. Fold in chopped chocolate. Transfer to prepared cake pans, approximately 130g each. Bake at 350°F for about 25 minutes, rotating halfway, or until skewer comes out clean.

1¾ cups unbleached all-purpose flour
1 tsp baking powder
1 tsp baking soda
½ tsp ground cinnamon
¼ tsp ground nutmeg
pinch ground cloves
¾ cup unsalted butter, softened
1½ cups lightly packed brown sugar
3 eggs
1½ cups homemade or bought unsweetened pumpkin purée

Frosting
1 8-oz package cream cheese, softened
¼ cup unsalted butter, softened
2 cups icing sugar
2 oz white chocolate, melted and cooled

INSTRUCTIONS
To make the cake, with the rack in the middle position, preheat the oven to 350° F. Butter and line two 8-inch springform pans with parchment paper.
In a bowl, combine the flour, baking powder, baking soda and spices. Set aside.
In another bowl, cream the butter and sugar with an electric mixer. Add the eggs one at a time, beating until smooth. Add the pumpkin purée and beat until incorporated. With a wooden spoon, add the dry ingredients. Spread the batter evenly between the prepared pans.
Bake for about 30 minutes or until a toothpick inserted in the centre of the cakes comes out clean. Let cool for 10 minutes. Unmould and let cool completely.
To make the frosting, in a bowl, using an electric mixer, beat the cream cheese with the butter and icing sugar until smooth. Drizzle in the chocolate, beating constantly. If it’s too soft, refrigerate for 15 minutes before frosting the cake.
With a serrated knife, slice each cake horizonally, to make a total of four layers. Spread one cut surface with one quarter of the frosting. Repeat steps with remaining layers.

Ingredients
1/2 cup butter, softened

1-1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/2 cup Baking Cocoa

1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
1/2 cup water
FROSTING:
1/2 cup butter, softened
3-3/4 cups confectioners' sugar
2 ounces unsweetened chocolate, melted
2 tablespoons evaporated milk
1 teaspoon vanilla extract
1/4 teaspoon salt
Chocolate sprinkles
Directions
Preheat oven to 375°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, cocoa, baking soda and salt. Combine buttermilk and water. Add dry ingredients to creamed mixture alternately with buttermilk and water, beating well after each addition.
Fill paper-lined muffin cups two-thirds full. Bake 15-20 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks to cool completely.
For frosting, in a small bowl, beat butter and confectioners' sugar until smooth. Beat in melted chocolate, milk, vanilla and salt. Frost cupcakes; garnish with chocolate sprinkles.
