Today is National Vanilla Cupcake day. Who doesn’t remember rich, vanilla cupcakes at childhood birthday parties? Licking the sweet frosting off your fingers and getting the crumbs all over your chin. Colored icing staining your tongue as you and your friends delightedly tell each other that your tongue is green, blue or, well you get the idea! Why not take a trip back to your childhood with this sweet little recipe for an old fashioned, simply perfect, vanilla cupcake.

This recipe adapted from the 1964 Ladies’ Home Journal Dessert Cookbook




Vanilla Cupcakes

½ cup butter
1 cup sugar
2 eggs
2 teaspoons good vanilla
1¾ cups flour
½ teaspoon salt
2 teaspoons baking powder
½ cup milk

Cream the butter
Gradually add the sugar and beat until light and fluffy.
Add eggs one at a time, beating well after each addition
Mix in vanilla
Sift flour, salt and baking powder together
Add flour to butter/sugar mixture alternately with the milk
Fill well greased muffin pans or use paper baking cups
Bake at 350 degree oven for about 25 minutes, cakes are done when the cakes spring back to the touch and pull away from the side of the pan.
Cool on racks.

Vanilla Frosting (This recipe courtesy Maudie Dee Barnes)

1 stick butter, softened
½ bag powdered sugar
1 teaspoon vanilla
Dash salt
Milk

Cream butter until soft and fluffy
Add powdered sugar mix well
Add salt
Add vanilla
Thin with milk until frosting reaches the consistency you desire

Frost cupcakes either with a butter knife or spoon into pastry bag and circle cupcakes with frosting until covered.

Simple, elegant a small step back to a simpler time.
